Vegetable Pulao Recipe

Here’s a simple and delicious recipe for Vegetable Pulao —a quick and easy Indian dish that’s perfect for your breakfast 
 Prep Time:10 minutes 
 Cook Time: 20 minutes 
 Serves: 4 
 Ingredients 
- 1 cup basmati rice (washed and soaked for 15 minutes) 
- 1 tablespoon oil or ghee 
 - 1 bay leaf 
- 1 cinnamon stick 
- 2-3 cloves 
- 2-3 green cardamom 
- 1 teaspoon cumin seeds 
- 1 medium onion, thinly sliced
 - 1 teaspoon ginger-garlic paste 
- 1/2 cup mixed vegetables (carrots, peas, potatoes, and green beans) 
- 1/4 teaspoon turmeric powder 
- 1 teaspoon garam masala 
- Salt to taste
 - 2 cups water
 - Fresh cilantro leaves for garnish 

 Instructions: 

 1.Prepare the Rice: Wash the basmati rice thoroughly and soak it in water for 15 minutes. Drain and set aside. 
 2.Sauté the Spices: Heat oil or ghee in a deep pan. Add cumin seeds, bay leaf, cinnamon stick, cloves, and green cardamom. Sauté until the spices release their aroma (about 30 seconds). 
 3.Cook the Onions Add the sliced onions to the pan and cook until they turn golden brown. Then, add ginger-garlic paste and sauté for another minute. 
 4.Add Vegetables and Spices Add the mixed vegetables (carrots, peas, potatoes, and green beans) to the pan. Sprinkle turmeric powder and garam masala. Stir well and cook for 3-4 minutes until the vegetables begin to soften. 
 5.Add Rice and Water Add the soaked and drained rice to the pan, gently stir it with the vegetables. Pour in 2 cups of water, add salt to taste, and bring it to a boil. 
 6.Cook the Pulao Once the water starts boiling, reduce the heat to low, cover the pan with a lid, and let the rice simmer for 15-18 minutes until fully cooked and the water is absorbed.
 7.Garnish and Serve: Fluff the rice with a fork, garnish with fresh cilantro leaves, and serve hot with yogurtor pickle on the side.
